- Smoked paprika: ½ tsp
- Salt: ½ tsp
- Black pepper: ¼ tsp
Instructions
- Sauté Vegetables:
- Heat olive oil in a large skillet over medium heat. Add onion and bell pepper. Sauté for 4–5 minutes until softened. Add garlic and cook 1 minute more.

- Stir in black beans, corn, cumin, chili powder, smoked paprika, salt, and pepper. Cook for 3–4 minutes until heated through. Remove from heat and let cool slightly.
- Warm Tortillas:
- Warm tortillas in the microwave, covered with a damp towel, until pliable.
- Assemble Burritos:
- Spread ¼ cup cooked rice in the center of each tortilla. Top with ⅓ cup bean mixture, 2 tbsp salsa, and 2 tbsp cheese. Fold in sides and roll up tightly from the bottom.
- Freezing:
- Wrap each burrito tightly in foil or parchment, then place in a labeled freezer bag.
- Reheating:
- Unwrap and microwave frozen burrito on a plate for 2–3 minutes (turning halfway), or bake wrapped in foil at 180°C/350°F for 25–30 minutes until hot.
