A rich creamy chocolate mousse made with ripe avocados and dark chocolate finished with fresh raspberries for a burst of flavor and color.

The first time I made this mousse my friends were amazed they couldn't taste the avocado at all: only pure creamy chocolate. It's now a staple for dinner parties where we need something special but also light and allergy-friendly.

Ingredients

  • Large ripe avocados: 2 peeled and pitted
  • Dark chocolate (70% cocoa): 100 g (3.5 oz) chopped
  • Unsweetened cocoa powder: 3 tbsp
  • Pure maple syrup (or honey): 4 tbsp
  • Pure vanilla extract: 2 tsp
  • Sea salt: Pinch
  • Unsweetened almond milk (or milk of choice): 3 tbsp more as needed
  • Fresh raspberries: 125 g (1 cup)
  • Dark chocolate shaved or finely chopped (optional): 1 tbsp
  • Fresh mint leaves (optional for garnish): As needed

Instructions

Melt chocolate:
Melt dark chocolate in a heatproof bowl over simmering water or microwave in short bursts stirring until smooth. Allow to cool slightly.
Blend mousse:
Combine avocados melted chocolate cocoa powder maple syrup vanilla extract and sea salt in a food processor. Blend until completely smooth and creamy scraping down the sides as needed.
Add almond milk:
Add almond milk one tablespoon at a time and blend until mousse reaches desired consistency.
Adjust sweetness:
Taste and add more maple syrup if needed for sweetness.
Spoon and chill:
Spoon mousse into 4 serving glasses or bowls. Cover and refrigerate for at least 1 hour to chill.
Add toppings:
Top each mousse with fresh raspberries shaved chocolate and mint leaves if desired before serving.
