# Directions:
01 - Set the oven to 425°F.
02 - In a mixing bowl, combine halved baby potatoes, sliced bell peppers, and red onion wedges with olive oil, minced garlic, dried oregano, dried thyme, smoked paprika, salt, black pepper, and red pepper flakes if using; toss to coat evenly.
03 - Transfer the vegetable mixture to a large rimmed baking sheet and spread evenly. Nestle the Italian sausages among the vegetables.
04 - Place the baking sheet in the oven and roast for 35 minutes, turning sausages and stirring vegetables halfway through, until potatoes are golden and tender and sausages reach an internal temperature of 160°F.
05 - Remove from oven and allow to rest for 5 minutes. Sprinkle with chopped parsley and serve with lemon wedges if desired.
