Marinated Cucumbers Onions Tomatoes (Printable)

# Ingredient List:

01 - 2 medium cucumbers, thinly sliced
02 - 1 pint cherry or grape tomatoes, halved
03 - 1 small red or white onion, thinly sliced

→ Dressing

04 - 1/4 cup apple cider vinegar or red wine vinegar
05 - 2 tablespoons extra virgin olive oil
06 - 1 clove garlic, minced
07 - 1 tablespoon chopped fresh parsley or dill
08 - Salt and freshly ground black pepper, to taste
09 - 1/2 teaspoon red pepper flakes (optional)

# Directions:

01 - Thoroughly wash the cucumbers, tomatoes, and onion. Slice the cucumbers into thin rounds, halve the tomatoes, and slice the onion thinly.
02 - In a separate bowl, whisk together vinegar, olive oil, minced garlic, salt, and pepper. Add red pepper flakes for additional heat if desired.
03 - Transfer sliced cucumbers, tomatoes, and onion to a large mixing bowl. Pour the prepared vinaigrette over the vegetables and gently toss to ensure even coating.
04 - Cover the bowl and refrigerate for at least 30 minutes or up to overnight to allow flavors to develop.
05 - Just before serving, toss the salad again and garnish with chopped fresh herbs.
