# Directions:
01 - Whisk together almond milk, chia seeds, maple syrup, and vanilla extract in a medium bowl or large jar until evenly blended.
02 - In a small bowl, blend matcha powder, peppermint extract, and green food coloring (if used) with 2 tablespoons of the chia mixture until smooth.
03 - Stir the matcha-mint mixture into the remaining chia pudding base until uniformly green throughout.
04 - Cover and refrigerate for a minimum of 4 hours, preferably overnight, until the pudding thickens to a creamy consistency.
05 - Stir the pudding well before serving. Portion into bowls or glasses.
