01 - 100 grams dark chocolate (at least 60% cocoa), chopped
02 - 60 milliliters heavy cream
03 - 0.5 teaspoon ground cinnamon

# Directions:
01 - Place chopped dark chocolate in a heatproof bowl. Heat heavy cream with cinnamon, cardamom, ginger, cloves, black pepper, and nutmeg in a small saucepan until just simmering. Pour the hot cream mixture over the chocolate, let stand for 1 minute, then stir until smooth and fully combined. Refrigerate ganache for at least 30 minutes, until firm enough to scoop.
02 - Scoop 8 small balls (roughly 1 tablespoon each) of ganache onto a parchment-lined baking tray. Freeze until solid for a minimum of 20 minutes.
03 - In a mixing bowl, whisk together all-purpose flour, baking powder, salt, and granulated sugar. In another bowl, beat the egg, milk, melted butter, and vanilla extract until smooth. Combine wet and dry ingredients, gently mixing until just combined. Avoid overmixing to ensure a light batter.
04 - Fill a deep pot or fryer with vegetable oil and heat to 175°C (350°F).
05 - Dip each frozen ganache ball into the fritter batter, coating completely. Using a spoon, gently lower coated balls into hot oil. Fry 3 to 4 fritters at once, turning occasionally, until golden brown, about 2 to 3 minutes per batch.
06 - Remove fritters with a slotted spoon, transferring to paper towels to drain excess oil.
07 - Generously dust warm fritters with powdered sugar. Serve immediately to enjoy the molten chai-spiced chocolate center.
