# Directions:

01 - Boil fettuccine in salted water according to package directions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
02 - Melt 1 tablespoon butter in a large skillet over medium-high heat. Season shrimp with salt and pepper, then cook 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
03 - Add remaining tablespoon of butter to the skillet. Sauté chopped onion for 2-3 minutes until translucent, then add minced garlic and cook for 1 minute until fragrant.
04 - Stir in sun-dried tomatoes and cook for 1 minute. Pour in chicken broth, scraping browned bits from the pan, and bring to a simmer.
05 - Lower heat to medium-low. Incorporate heavy cream, grated Parmesan, Italian herbs, and red pepper flakes. Simmer 2-3 minutes until sauce slightly thickens.
06 - Add baby spinach to the sauce and stir until wilted.
07 - Return cooked shrimp and drained pasta to the skillet. Toss to coat evenly with sauce, adding reserved pasta water gradually to adjust consistency.
08 - Adjust seasoning with salt and pepper to taste. Plate immediately, garnishing with chopped parsley and extra Parmesan cheese.
