Spicy BBQ Pickle Rib Sandwiches (Printable)

01 - 2.5 lbs pork baby back ribs
02 - 1 tablespoon kosher salt
03 - 1 teaspoon black pepper

# Directions:

01 - Preheat oven to 300°F. Line a baking sheet with aluminum foil.
02 - Remove the thin membrane from the back of the ribs and pat them dry.
03 - In a small bowl, mix together kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Rub the seasoning mixture evenly over the ribs.
04 - Place the seasoned ribs on the prepared baking sheet. Cover tightly with foil and bake for 2 hours until the ribs are very tender.
05 - While ribs bake, combine barbecue sauce, hot sauce, honey, and apple cider vinegar in a small saucepan. Simmer over low heat, stirring occasionally, for 10 minutes.
06 - After 2 hours, remove the foil from the ribs. Brush generously with spicy BBQ sauce. Return ribs to oven uncovered and bake for 10–15 minutes or broil for 3–4 minutes until sauce is caramelized and sticky.
07 - Let the ribs rest for 10 minutes. Carefully remove bones and slice the meat into large chunks.
08 - Brush cut sides of each bun with melted unsalted butter. Toast in a skillet or under the broiler until golden brown.
09 - Layer rib meat onto the bottom half of each bun, top with sliced dill pickles and coleslaw, drizzle extra BBQ sauce if desired, then cover with the top bun and serve immediately.
