01 - 2 ripe mangoes, peeled and roughly chopped (about 2 cups)
02 - 2 tablespoons agave syrup
03 - Juice of 1/2 lime
→ Coconut Chia Layer
04 - 1 cup canned full-fat coconut milk, shaken
05 - 2 tablespoons chia seeds
06 - 2 tablespoons unsweetened shredded coconut
07 - 2 tablespoons agave syrup or maple syrup
08 - 1 teaspoon vanilla extract
09 - Pinch of salt
# Directions:
01 - In a blender, combine the mango pieces, agave syrup, and lime juice. Blend until completely smooth. Set aside.
02 - In a medium bowl, whisk together coconut milk, chia seeds, shredded coconut, agave syrup, vanilla extract, and salt. Let sit for 10 minutes, stirring occasionally until the mixture thickens.
03 - Pour a thin layer of mango puree into ice pop molds, filling each about halfway.
04 - Carefully spoon the coconut chia mixture atop the mango layer, filling the molds to the top.
05 - Insert ice pop sticks into each mold. Gently tap molds to eliminate air bubbles and swirl gently with a stick for a marbled effect if desired.
06 - Freeze for at least 4 hours or until completely solid.
07 - To release the ice pops, briefly run the outside of the molds under warm water. Serve immediately.
