# Directions:
01 - Mix cottage cheese and flour in a mixing bowl until a cohesive, soft dough develops.
02 - Turn dough onto a floured work surface and knead for 2 to 3 minutes to achieve a smooth, elastic consistency.
03 - Portion dough into 2 or 3 equal pieces. Roll each piece to approximately 1/4-inch thickness.
04 - Preheat a non-stick skillet over medium heat or an oven to 450°F.
05 - For stove-top, cook each flatbread for 2 to 3 minutes per side until golden and slightly puffed; alternatively, bake for 6 to 8 minutes.
06 - Optionally, brush warm flatbreads with olive oil or melted butter and sprinkle with desired herbs or spices. Allow to cool slightly before serving or storing.
