01 - 14 oz smoked sausage (kielbasa or similar), sliced

02 - 1 medium onion, chopped
03 - 2 cloves garlic, minced
04 - 10.5 oz green cabbage, chopped

06 - 2 medium carrots, sliced
07 - 2 celery stalks, chopped

# Directions:
01 - Heat olive oil in a large soup pot over medium heat. Add sliced sausage and cook until browned, about 4 minutes. Remove the sausage with a slotted spoon and set aside.
02 - In the same pot, add chopped onion, sliced carrots, and chopped celery. Cook until the onion becomes translucent, about 5 minutes.
03 - Add minced garlic to the pot and cook for an additional 1 minute until fragrant.
04 - Stir in chopped cabbage, diced potatoes, dried thyme, smoked paprika, and bay leaf. Cook while stirring for 2 minutes to combine flavors.
05 - Pour in the chicken or vegetable broth and bring to a boil. Reduce heat to a simmer, cover, and cook for 20 to 25 minutes until vegetables are tender.
06 - Return the browned sausage to the pot and simmer uncovered for an additional 10 minutes to meld flavors.
07 - Remove the bay leaf. Season with salt and pepper to taste. Ladle into bowls, garnish with fresh parsley, and serve hot.
