# Expert Advice:

01 -
  • It balances rich beef and creamy avocado with the natural sweetness of roasted potatoes.
  • Everything cooks in under an hour, and you can prep components ahead if you want.
  • The tangy yogurt-lime dressing pulls it all together without feeling heavy.
  • It's easy to customize with different proteins, greens, or toppings you already have.
02 -
  • Don't overcrowd the skillet when searing the beef or it will steam instead of getting a good crust.
  • Let the sweet potatoes roast undisturbed for the first half so they caramelize properly before flipping.
  • Slice the beef thin and against the grain so it stays tender and easy to chew.
03 -
  • Let the beef rest for a few minutes after searing so the juices redistribute and it stays tender.
  • Roast the sweet potatoes on parchment paper for easier cleanup and to prevent sticking.
  • If your avocado isn't quite ripe, leave it on the counter for a day or two before slicing.
